How to soak Babà with rum or limoncello (procedure for 1 pack)
Ingredients for 1 pack: 8 dl of water, 350 g of sugar, half a glass of rum or limoncello, five lemon zests.
Preparation method: Put everything together in a pot, bring it to a boil, and let it boil for about five minutes. Remove from heat and let the syrup cool. When it reaches a temperature of about 40°, add half a glass of rum or limoncello. Mix everything and immerse the Babà completely for about five minutes. Squeeze them lightly to remove excess rum and let them drain for another five minutes. Finally, using a pastry syringe, fill the Babà with custard or spreadable chocolate and, if desired, decorate with dessert jelly. The Babà should be served cold with the optional addition of a bit of previously prepared syrup.
